ORGANICS & BIODYNAMICS IN WINEMAKING
Winemaking or vinification is the production of wine, starting with the selection of the fruit, its fermentation into alcohol, and the bottling of the finished liquid. The history of wine-making stretches over millennia. The science of wine and winemaking is known as oenology.

The TERROIR

It's all about making Real Wines. So, what are Real Wines? They are Terroir wines. So, what are Terroir wines? Wines achieved by growing vines of a specific variety; in a specific region, in a specific soil, in a specific climate.
The role of the Winemaker is to express these terroir components by minimal invention through a combination of 'old world' traditions (experience) and 'new world' technology (practicality).

Like grape growing, wine making is a natural process too and will express terroir if left to its own elements.

COSMOIR - Redefining Terroir

Terroir can be defined as characteristic taste and flavour imparted to a wine by the environment in which it is produced. Local environment factors include the soil, topography, climate, and the human touch all contribute to the particular characteristics that constitute the aroma and taste. Such profiles are unique to each individual vineyard which gives each wine an origin or "sense of place".
Carlei Green Vineyards - Discover the Artistry of Cosmoir Wine
At Carlei Green Vineyards, we are committed to pushing the boundaries of winemaking to create unique and exceptional wines that captivate the senses. One such innovation that has been taking the wine world by storm is Cosmoir wine. In this page, we invite you to delve into the world of Cosmoir wine, learn what it is, and explore how it differs from standard winemaking techniques.
What is Cosmoir Wine?
Cosmoir wine represents a ground breaking approach to winemaking that marries traditional techniques with cutting-edge science and a deep reverence for the environment. Developed by our visionary winemaker, Sergio Carlei, Cosmoir wine is a testament to his unwavering commitment to sustainability, quality, and innovation.
At its core, Cosmoir wine embodies the belief that great wine should reflect the harmony between the vineyard, the cosmos, and the human touch. It's a philosophy that harmoniously combines the old and the new, science and tradition, land and spirit.
The term "Cosmoir" itself is a fusion of "Cosmos" and "Terroir," emphasizing the cosmic influences on our vineyards and the unique terroir of our estate. These cosmic influences include lunar and celestial rhythms, which play an integral role in the winemaking process.
What is Terroir?
Terroir, a term deeply cherished by winemakers and enthusiasts alike, as it encapsulates the unique environmental and geographical factors that influence the taste and character of a wine. It encompasses the soil composition, microclimate, topography, and even the human touch in a specific vineyard. These intricate elements interplay with the grapevines, shaping their growth and ultimately, the flavour profile of the grapes they produce. The essence of terroir lies in its ability to impart a sense of place to a wine, allowing it to carry the distinct flavours and nuances of its origin. As a result, wines from different terroirs can exhibit a wide range of flavours, aromas, and textures, making each bottle a unique reflection of its geographic and environmental heritage. Terroir is the fingerprint of a wine, a journey through the land it hails from, and a captivating exploration of nature's influence on the art of winemaking.

How Does Cosmoir Wine Differ from Standard Winemaking Techniques?
Biodynamic Farming
Cosmoir wine embraces biodynamic farming practices, which emphasize a holistic approach to agriculture. We follow lunar and celestial cycles for planting, pruning, and harvesting, harnessing the energy of the cosmos to optimize grape quality and flavour.
Minimal Intervention
Unlike many conventional winemaking practices, Cosmoir winemaking employs minimal intervention in the cellar. We let the grapes express their true character, allowing for a more authentic and pure representation of the terroir.
Natural Fermentation
Cosmoir wines use native yeast strains that naturally occur in the vineyard. This spontaneous fermentation allows for a richer and more complex flavour profile, unique to each vintage.
Elevated Aging
The aging process for Cosmoir wines often involves the use of cosmic-inspired aging vessels, such as amphorae buried in the earth to harness the energy of the land and cosmos. This results in wines with exceptional depth and character.
Sustainable Practices
Carlei Green Vineyards is committed to sustainability, and Cosmoir wine is no exception. From our solar-powered winery to our minimal use of chemicals in the vineyard, we prioritize eco-conscious practices to protect the environment for future generations.
