The TERROIR

It's all about making Real Wines. So, what are Real Wines? They are Terroir wines. So, what are Terroir wines? Wines achieved by growing vines of a specific variety; in a specific region, in a specific soil, in a specific climate. 
 

The role of the Winemaker is to express these terroir components by minimal invention through a combination of 'old world' traditions (experience) and 'new world' technology (practicality).

Like grape growing, wine making is a natural process too and will express terroir if left to its own elements. 

COSMOIR - Redefining Terroir

Terroir can be defined as characteristic taste and flavour imparted to a wine by the environment in which it is produced. Local environment factors include the soil, topography, climate, and the human touch all contribute to the particular characteristics that constitute the aroma and taste. Such profiles are unique to each individual vineyard which gives each wine an origin or "sense of place".
